. . . do you like Ricotta cheese in it, Cottage cheese, or just mozerrella and cheddar?

I am curious because I love Ricotta but my hubby does not. So what is your way of choice?

I use provel, mozerella, parmasean, and cottage cheese. I've used ricotta but I find it lacking in flavor.

I use Ricotta and a four cheese blend in between the layers. The gooier the better.

I think so. It brings out the flavor of the sauce more.

What do you do for sauce?

Normally i just buy a big thing for Ragu and use that because I do not have the time to make my own.

It only takes 5 or 10 minutes to make sauce.

carmalize half an onion with olive oil and garlic
add salt and pepper
once it sweats add a fist full of diced sundried tomatos
add a can of diced tomatos
add a can of minced tomatos
add basil
add taragon

depending on what I'm putting it on I'll add in some tomato paste to thinken it... things like ravioli need a sauce that sticks to them more so than lasagna (where the cheese and noodle starch do the trick).

...ummm...the family recipe calls for Mozarella, Cream Cheese, and Sour Cream as the "cheeses" involved. Its very tasty. I really don't like it with Ricotta, but I have a feeling that's because I'm used to the other.

Me, too. I have never knowingly eaten lasagna made with cottage cheese. I can't say the idea is completely disgusting to me, but I can't say it sounds appetizing either.

Cottage cheese in lasagne sucks tremendously. My mother insists you can't tell the difference. I insist 45 years of smoking broke her tongue and nose beyond repair.

Ricotta and mozerella are what I use when I make what passes for lasagna during my time in the kitchen. (if anyone is interested I can dig out the recipe for them from my NTL thread)

edit: and another vote for GG's blend sounding good.

Unfortunately, tomato soup tastes like ass. I never have understood how people can eat that shit like actual soup. It's an ingredient, not a dish.

Chicken noodle soup is good for grilled cheese.

Ah, Sobek. You are one of the few sane people in the world, and this is yet mroe proof. Tomato soup is some nasty shit.

Grilled cheese sandwiches do indeed go well with chicken noodle soup, but I also like them with vegetable beef soup or with a small salad.

Grilled cheese sandwiches do indeed go well with chicken noodle soup, but I also like them with vegetable beef soup or with a small salad.I like them with a bit of salsa placed between the slices of cheese before they are cooked... :D You are both good people, yet and both horribly wrong on tomato soup I'm afraid. I do however (after hearing the idea of pairing the sandwiches with non-fruit based soups) wonder how grilled cheese would go with a nice cheesy potato soup... edit: (which I normally/currently pair with some good warm bread and some margarine to spread on it)

Ricotta with percorino romano for bite.

The ricotta MUST be fresh.

I season the ricotta with pepper and some garlic powder.

I put one egg in and mix that all by hand.


I boil the pasta and fry up the beef/pork/veal mix - 85% lean.
Toss in some diced carrots and bell peppers - very fine

cook til dark, drain off fat.

I start my layering, putting a bit of gravy in each later along with the cheese mixture and meat.

i top it with sauce and fresh mozz. if it wasnt hot when i bought it - i dont want it.

I've had lasagne with a variety of cheeses but ricotta must be present for me to even consider eating it.

For my chili I enjoy layering cornbread, chili, cheddar cheese then top it off with sour cream.

Tomato soup rocks with some fresh basil, cracked pepper and a splash of cream. Add a grilled cheddar sandwich and some crackers on the side and I'm in heaven.

This is of course distinct from singles, which aren't cheese at all.
